Dinners to Die For!

Dinner after the tailgate yesterday was TO DIE FOR. Honestly, seriously good and a fantastic experience!

The four of us went down to 7th Street and ate at Patrizio. This was my first time to eat there and it was super good. We sat outside and it was such a beautiful night.

I wasn’t super hungry when I arrived there but I quickly started feeling it once we got there. As an appetizer, we ordered the Tomato Mozzarella Salad. It wasn’t too bad! I liked the Basil Pesto they served with it.

For the table, we ordered a pizza with pepperoni, bacon, roasted red peppers, and sun-dried tomato. It was pretty good… I don’t know that it was the best pizza I have ever had. It was thin crust but a little floppy. I love thin crust, but I like a sturdy thin crust.

Spencer and I shared the Chicken Romano. It was basically breaded chicken with bow-tie pasta in alfredo with vegetables. It was really good but really rich.

Mom and Eric shared the Penne Arrabbiata. There food was pretty good too, but not as spicy as the menu description made it out to be.

For dessert… (as if i wasn’t full enough)… Spencer and I ordered the Apple Tart and Mom and Eric ordered the Cappaccino Pie

The apple tart was really good. A little chewy and I wish there had been more ice cream… because I love ice cream… but the apple part was very good.

The Cappaccino Pie was also very good. It was basically an espresso ice cream pie.

It was an all together great dinner πŸ™‚

Tonight, I got to hang out with two of my favorite gentlemen… Camper and Dad πŸ™‚ They took the fun trip to Fort Worth to see Spencer in his performance and then go to dinner!

And I am very happy I did not miss this performance, for Spencer actually drew blood in the on stage sword fight! My little bad guy…

And is it sad to say I am happy he will be done with it after tonight? I personally think he should always audition for shows and always do theatre while he can because he is so talented at it and I know it makes him happy (and yes I know he will probably read this but it is not why I am saying it).

For dinner, we hit up Chuy’s. Camp had never been there and I had only been there once.

I ordered the Fajita Chicken Soft Tacos... they were pretty tasty. I don’t know… hate to say it but a lot of Mexican food just starts to taste the same to me… I guess I just have to get the right thing. There are the few places I am obsessed with… but most are just meh.

After getting back, I had an important decision to make out… work out or sit on my butt looking at Pintrest.

I am addicted to Pintrest. Girls, it will take over your life. Guys, it is a waste of time for you to be on there.

Point is, I went and worked out. It was necessary… gotta keep up these muscles I am starting to form! (Which is really exciting to me for some reason!)

Well now I’m going to sit with a nice cup of hot Apple Cinnamon tea and watch Food Network… boy I’m so exciting πŸ˜‰

Last TCU Tailgate

Everything this whole entire week has been leading up for this fantastic weekend.

I started off my Friday morning with a nice bowl of Kashi Cereal Comboness with sliced bananas and almond milk. I almost wasn’t going to buy milk since I will be going home soon for Thanksgiving, but it wasn’t going to expireΒ  until January so I knew I would finish it by then!

Since Becca andΒ  Michelle were going out to see Breaking Dawn last night without me and Spencer had a performance for theatre, I took the opportunity to spend a girls night with Miss Hannah πŸ™‚ We went to Central Market and got some sandwiches, got into the holiday spirit with some Starbucks (I love my Peppermint Mochas!) and then went back to Spencer’s appartment in which all the guys were gone and continued girls night with a little baking!

First we made some Pumpkin Crunch Cake for the tailgate the next day.

We also made Muddy Buddy Truffles (or powdered sugar covered Buckeyes). Yummilicious.

And with the left over chocolate, we dipped some cooked frozen cookie dough in it. Oh boy it makes them so much better!

Also, I introduced Hannah to Modern Family. If you do not watch Modern Family, YOU MUST START IT! It is so great!

Today we did another tailgate sesh! Sadly, probably our last of the season 😦 We picked up some barbeque and had the Pumpkin Crunch Cake.

The tailgate was a lot of fun, but it was super windy… and our Dollar Store silverware was not very efficient πŸ˜›

The pumpkin crunch cake is SO GOOD! Family, get excited for Thanksgiving because THIS will be making an appearance!

Recipe will come AFTER Thanksgiving πŸ˜‰ Don’t want you family members stealing my dish!

Great weekend!

What a fantastic weekend I had! First I got to spend my Friday night with my mom, and then I got to spend my Saturday night and all day Sunday with my Dad! So here is a little bit about my weekend:

Saturday

Saturday morning I woke up nice and early to head to work. I really love when the sky looks all different colors. That is one of God’s morning beauties that I love to see!

After going to work, I headed to Dallas to eat at a new restaurant, The Angry Dog. This restaurant was really good! I found out that Dad knew the owner and that the owner and his wife was who gave us our awesome Ranger’s tickets this season!

I was not hungry AT ALL, but we had to get an order of fried pickles because Spencer loves those.

We also got an order of fried mushrooms that were alright.. but the pickles were much better!

For dinner, Spencer and I shared just “The Burger”. It was pretty good. Nothing too special but the fries were definitely awesome. Other than just the meet, we threw some cheese and avocado on our burger. Pretty tasty.

We headed on to the concert… which was SO AWESOME. Zach Brown Band was fantastic. It was a great night of great company and great making fun of silly drunk dancing lady behind us πŸ˜›

Sunday

Sunday I woke up bright and early and headed to church with Dad. It was such a great message and was exactly what I needed!
For brunch, I created myself an egg open-faced sandwich with Pepperjack cheese and some strawberries and blackberries on the side. Yummy πŸ™‚

After brunch, I got to catch up on some Cooking Channel recordings of Eat Street. I love this show! I love learning about all of the new food trucks and learning about where I need to go. I should have a career as a food critic. Just need to know how to get into the business!

After doing that and a little bit of studying for my education class (oy vey!), I went and got a little bit of work out in. Just 30 minutes on the elliptical and some abs… didn’t necesarily leave content in what I had done but whatever…

After working out, Dad and I cooked a wonderful dinner of grilled chicken, steamed broccoli, and salad. The chicken was such a good flavor!

And as always… the star of all my meals, the dessert:

The answer to your question is yes. It was heavenly. Thank you for asking. That right there is simply a big hunk of tub cookie dough baked for about 30 minutes or so and then putting some awesome Blue Bell vanilla ice cream on it. So. Good.

All together… a very great weekend! Annnndd found out today that my religion class is cancelled Thursday AND Tuesday! Thank goodness!

In the kitchen again!

I finally got in the kitchen again!!! Woohoo!

 

So last night, I got to go home and cook dinner for my mom, Eric, Sara, and Camp. It was a super successful meal! It was exactly what I needed after such a long week of work and just total junk.

 

For dinner, Mom wanted Mexican food. So, on the menu was Mexican Spice Grilled Chicken, Grilled Vegetables, Black Beans, Whole Wheat Tortillas, and Guacamole.

 

I was so excited that when I got to the house, everything was already cut up!

Oh my, stress free! Have I mentioned I’m not really a fan of cooking? I much prefer baking! I hate the “Do 10 things at once” aspect of cooking… it really stresses me out! With baking, I just kinda throw some ingredients together, let it cook, and then it is done!

 

First was some guacamole for munching on with fritos. Yes Fritos. We didn’t have tortilla chips!

 

Everyone dug in way to fast….

Guacamole

3 avocados

1/2 lime juice

1 minced garlic clove

1/4c pico

1/2 tsp cumin

1/4 tsp salt

pepper to taste

1.) Mix all of the ingredients together!

 

Then I seasoned the vegetables with a little EVOO, salt, pepper, cayenne pepper, and cumin. Threw them on a pan covered in foil and in the grill they went!

The chicken was seasoned with a packet of taco seasoning and then thrown on the grill also.

Dinner was very successful and I think everyone loved it! It was so great getting to see my mom and Eric… but I hate to say it… I missed my siblings! And I actually felt like they missed me which makes me sad and makes me miss them more.

And dessert. Oh lordy dessert. This was suprisingly amazing. You would never know that something so simple could taste so good.

The recipe called for almonds… and this is what I found in the pantry… and they were UHMAYZING, so you know that I had to use them!

Topped these with some ice cream and ohh man. I mean… these definitely could have been done without it they were so good.

Baked Apples

serves 5 full apples or 10 people with halves

5 granny smith apples, cored and halved

honey

2 tbsp brown sugar

1/2 c almonds, chopped

1 tbsp cinnamon

apple juice, apple cider, or I just used water

butter (I used “I can’t believe its not butter” spray)

1.) Place apples in baking dish. To make them not rock, cut a little flat section on the back so they will sit still.

2.) Drizzle apples with honey.

3.) Combine almonds, cinnamon, and brown sugar. Sprinkle over apples.

4.) But a little bit of butter on top of each apple. (Since I used the spray for this… I just gave it about five sprays on each apple, just enough to moisten the sugar mixture.

5.) Fill dish with liquid of choice about halfway up apple.

6.) Bake 45 min-1 hour… until apples are browned

Serve Immediately

So tonight, I am meeting my Dad and Ms. Small down in Dallas for Zach Brown Concert tonight!!!! And I am getting to share this date night with Spencer… FINALLY! Oh boy I am soooo excited… and can’t wait for it… getting ready as I type!!

 

 

Unwinding

Last nights event went swimmingly! We did free hot cocoa in the commons and got done a whole hour early because we ran out of cocoa! How cool is that!

So about this morning:

Have you ever had one of those mornings that you feel like you have been hit by a bus and just don’t want to move. This girl right here did… oh man was it hard to get out of bed this morning… But I did. I got out of bed. At 8am I rolled my self out of bed!

Just did my usual morning wake up routine: Turning on the TV to USA, eating a bowl of Kashi Cereal Combo-ness with banana slices and almond milk. I mean… i really like my cereal. Really.

After doing all that and a little homework, I headed to the rec for a little bit of unwinding.

I was only going to do a simple 30 minutes on the elliptical… but I started watching Good Eats on Food Network and they were talking about the THOUSANDS of different oils you can use for cooking and I really just got into it. It was kinda cool though because some of the stuff I had learned in my nutrition class was referenced and I already knew it! I’m a Foodie and proud of it.

Also, I have loved y’alls comments. I’m really considering this study abroad thing… I mean, the whole focus is Food Insecurity which I am not really incredibly familiar with in Foreign countries… I dont know, I’m all over the place with this!

On another note, I think I’m going to have to start planning Thanksgiving Dinner! It’s starting to sound like I will be responsible for it which is SO exciting but also… you are asking the most indecisive person what to make for an important meal… bad idea. (Tara…. you can come eat the food I make πŸ™‚ )

Well, I’m off to classes then work until 11pm. I need a life.

Crazy Stupid Love

Last night I had a much needed night in with the girls watching Crazy Stupid Love. I got all cozy and ready for the movie with my Keurig Hot Cocoa with Trader Joes Marshmallows and Cinnamon Sprinkles and a movie munchie of Magic Pop and Biscoff Spread. Yummmy!

All of us girls, minus Michelle, hopped on my bed and watching beautiful Ryan Gosling the movie.

It was super good! If you haven’t, definitely a must see!

For breakfast this morning, I filled my belly with a nice bowl of buckwheat cereal, sunflower seed butter, and frozen bananas…. annnd the picture is sideways. I am so super weird πŸ˜›

After a long day of classes, I went with Michelle to help do mail outs for the TCU Baseball Team. I think I trifolded over 150 pieces of paper to fit into envelopes… This is only a small portion of them!

After doing that for a bit, Spence and I got ourselves “linner” at Dutch’s. It was the first time I had been there this year! Pretty good!

Side note: My to-do list is off the wall. I think I may just fall into a coma. What have I gotten myself into :\

Another side note: So I’m considering maybe studying abroad in Spain for two weeks in May. The last day is June 1st and I may think of spending the couple days after in Europe for my birthday! How cool is that?!?! What do you think?

Well, I have an awesome Free Hot Chocolate event tonight I’ve got to get ready for… Let’s hope I don’t freeze to death!

Dorm Arrest

A whole month later and I am inspired to blog again! I need this release after a crazy weekend which looked a little something like this:

Friday:

4:30pm Drive to Dallas after class

5:30pm Arrive in Dallas for a Wedding Rehearsal

8:30pm Leave Dallas to be back at TCU by 9:15pm

9:15pm Pick up one of my Frog Aides from TCU to take her to Weatherford for our overnight Retreat

10:00pm Arrive at the retreat in Weatherford

10:10pm Be asked to drive BACK to TCU that night to take two girls home

11:45pm Leave the Retreat and head back to TCU with said two girls

12:45am Arrive back to TCU and GO TO SLEEP!

Saturday:

8:00am Wake up to shower before the wedding

9:00am Leave for Dallas

10:00am Arrive in Dallas for Wedding

12:00pm Drive around Dallas to pick up food for the Bride and Bridesmaids

1:00pm Arrive back at the venue

12:00am Leave Dallas

12:45am Arrive at TCU and GO TO SLEEP!

Sunday:

9:30am Wake up to get some things done before work

1:00pm Work

10:30pm Arrive back at TCU after work

12:30am Go to sleep

Monday:

7:50am Wake up to get ready for class

8:00am Class

2:00pm Done with class and head to work

3:00pm Work

Yeah, I’m loving not doing anything now but blogging. And today has been just an awesome day so far! Enjoy the lack of pictures… i wasn’t planning on blogging today!

I woke up and had a typical cereal combination

Then I went and worked out with Becca. My workout consisted of:

3 sets Forward and Side Crunches (20 each)

3 sets Lunges (2o each)

3 sets Bicep curls (15 each)

3 sets Russian Twists (1 min each)

3 sets other leg things… (20 each leg)

3 sets triceps (15 each)

3 sets shoulders (15 each)

3o min Interval Run (1 min run, 2 min walk)

It was nice to get back into the gym…. but my muscles were so tight!!!!! I definitely need a massage. After my workout, I came back and had a cup of coffee.

Interesting Fact: Coffee interferes with your body absorbing iron!!!! Iron helps you have energy! Most sources of Iron are in breakfast foods… so coffee with breakfast… Not necessarily a great idea!!!

(Have I mentioned I love my nutrition class?)

For lunch was nothing you haven’t seen before… a sandwich. Yay. Exciting.

Well, now I’m on dorm arrest by my roommates who wont let me do anything after this crazy weekend! I just can’t wait for Thanksgiving Break… I need to bake something. Want to torture me? Don’t give me a kitchen to cook or bake in. I’m suffering.
